Stir fry the chicken until cooked.

In a separate pan cook the rest of the sauce ingredients and drizzle over the chicken.

Stir-fried Thai Chicken

Ingredients:

8 ounces transparent rice noodles (rice sticks)

2 tbsp. fish sauce

2 tbsp. fresh lemon juice

2 tsp. sugar

1 tbsp. sambal

3 tbsp. grape seed or canola oil

3 shallots, sliced 1⁄8 inch thick

1 pound ground chicken

1⁄2 cup scallions, green and white parts, sliced 1⁄8 inch thick

1⁄3 cup Sweet basil leaves cut into 1⁄8-inch ribbons
